Vegetable Skillet

  • 1 small red onion diced
    3 cloves garlic minced
    2 tablespoons olive oil
    3 cups carrots sliced - about 1 pound of carrots
    4 cups kale chopped - I prefer to use toscana kale

    8 cups spinach chopped - can use baby spinach

    2 teaspoons garlic powder

    2 teaspoons red wine vinegar
    1/2 teaspoon salt
    1 cup vegetable broth low sodium
    1 can navy beans low sodium, rinsed and drained
